In Hanoi, phở gà is served with skin-on chicken — not always easy to find here. The chicken is naturally yellow from roaming free, known as gà dai for its tender bite. My mom prepares it just like they do back home: with poached chicken, a soft-boiled egg, shiitake mushrooms (nấm hương), fresh chili, herbs, and green onions.
